Below are the ingredients needed to make delicious, quick and easy Chickpea Guac!
15 oz. Chickpeas., rinsed and dried
4 Scallions, thinly sliced
1 Medium Onion, chopped
1/2 Avocado, peeled and chopped...save the other half for your face mask ;)
1 Medium Tomato, chopped
1/2 bunch of Cilantro
1 Tablespoon of Green Chili, chopped
1 Tablespoon of fresh Lemon juice
Let's get started.
Now this is something quick and easy to make. Last minute girls night? Taco Tuesday? Delicious mid-day snack on the beach.
First grab your Chickpeas and place them into your NutriBullet, then add the 4 thinly sliced scallions, 1 medium chopped onion, 1/2 an Avocado.
Pulse for 4 seconds, till mixture starts to thicken. Add in chopped Tomatoes, 1 bunch of Cilantro, 1 tablespoon of Green Chili and 1 tablespoon of fresh Lemon Juice.
Pulse until mixture is creamy and thick.
Sprinkle some left over chopped Scallions on top & there ya have it!
